This is so simple and always hits the spot. If you're making a pot of rice for dinner, add an extra cup and have leftover rice on hand to make this- you'll thank yourself tomorrow! It is adaptable and easy enough to make when you're running low on sleep and the ginger is just so warming and grounding for your postpartum body.
Ingredients
2 cups leftover rice or any cooked grains (day old makes the best fried rice)
1 Tbsp ginger, finely chopped
2 cloves garlic, finely chopped
1 green onion, diced- separate white and light green parts from dark green parts
1/2 cup frozen peas or edamame, thawed or lightly warmed through
2-4 eggs
A few dashes of soy sauce, sesame oil or rice vinegar- use what you have and like
Sriracha or whatever spice you enjoy
Method
-Gather your and prepare your ingredients so that are all ready to go. Preheat a skillet over medium heat.
-When your ingredients and pan are ready, add a tablespoon of oil or butter and quickly cook your white and light green onions, garlic and ginger- about a minute.
-Once everything smells really yummy, add in your rice and let cook for a minute or so before mixing and allowing to cook that way for a few more minutes.
-Add your peas or edamame and then your soy sauce, sesame oil or rice vinegar and cook a minute more.
-Portion into bowls.
-Add a little more oil or butter to your skillet and cook your eggs, leaving the yolks nice and runny OR move fried rice to one side of the pan, scramble your eggs on the other and then gently mix them together.
-Top your rice with the eggs (if not already mixed in) and sprinkle with the remaining green onions and some sriracha or chili crunch.
