I love these. I make these twice a week at home and I often make them for my clients. I will make a big batch and stick some in the fridge or freezer so they can pull a couple out, toast them up and have a filling meal whenever it's needed. If you don't love the texture of cottage cheese, you can blend it before mixing the batter together. However, the original texture creates these yummy little cheese pulls that are nothing like just eating it plain, so give it a try!
Ingredients
1.5 cups cottage cheese
4 eggs
1-2 tsp vanilla extract (I like a lot, follow your heart)
1 Tbsp baking powder
1 cup flour (use gluten free, if you'd like)
Method
Mix all the wet ingredients, then add the dry ingredients. Let sit for about 5 minutes before adding scant 1/4 cup pancakes into your preheated, buttered pan. You will have to use your finger or a spoon to spread them into circles, as the batter is quite thick. Cook a few minutes per side. Top with PB&J, lemon juice and powdered sugar, butter and syrup with berries, whatever you want!
